Sweet and Sour Pork

This evening was Sweet and Sour Pork. Russell used a recipe he found out of 500 best healthy recipes by Lynn Roblin, with some slight alterations. Here is what he used:

SAUCE:
1 cup chicken stock
1/2 cup brown sugar
1/2 cup ketchup
2 tbsp rice wine vinegar
1 tbsp soy sauce
2 tsp olive oil ( should have been seasame oil)
4 tsp cornstarch
2 tsp minced fresh garlic
1 1/2 tsp minced fresh gingerroot

Cooked in the WOK with the following:
2 Pork Steak (suppose to be loin) sliced into thin strips
1 1/2 cups sweet Peas (suppose to be snow)
3/4 cup green Bell Pepper
1/2 cup chopped finely green onion
left out the 1 1/4 cup of red pepper strips

Served with Rice
1 cup of rice for two people (1/2 cup of rice per person)

As always this turned out very good. This was an easy meal to cook but took about 30 minutes to do the prep work so good to do only if you have time for the prep work or can do some of the prepping of you vegetables ahead of time.

Hamburger Casserole

Since Russell is learning to cook dinner on a schedule I decided today would be one of the family favorites: Hamburger Casserole. I remember when he was little and he thought it took so much for me to make this meal. Now he knows that this is one of those easy to cook staple meals for people and it is fairly cheap to make.

Hamburger Casserole
Cook and drain 1 pound of ground beef
Place in the bottom of your correll baking dish
spread one can of drained whole kernel corn or equialent frozen corn on top (you can use any vegetable really)
Place frozen tator tots on top until covered (I used the cheapest bag I find)
Then use a spatula and spread out one can of cream of chicken or cream of mushroom (your preference) on top to cover the tator tots.
Place in the over preheated to 350 degrees for one hour.
Take out and serve.

This recipe serves four but we usually eat a salad too.

I love these kind of recipes because anyone can make them and you can mix it up to taste different depending on just a few ingredients. By the way....Russell made it just right. Yummm!!!!!

Dinner ala RG

Today I asked RG to make supper tonight and as always he used him creative side. We had "KITCHEN SOUP" meaning anything he decided we had in the kitchen to put into the soup. Here is a list of some of the ingredients: rice, garlic, onion, potatoes, carrots, celery, green beans, peas, tomatoes, chicken broth and I am not sure what else. It was actually pretty good considering he had no recipe and I am not fond of vegetable soup. MG who is very picky even ate two bowls. Guess he will have to eat more often.
